Obe Eja Dindin (Fried Fish Stew)



Ingredients needed

1 large fish (cleaned & gutted)

450g fresh tomatoes

225g fresh chilies

3 tablespoon tomatoes puree

1 large onion

2 lemon- groundnut oil


Pinch of thyme and curry

Salt to taste




Method of preparation

Step 1: clean and gut the fish

Step 2: cut into medium size piece and wash thoroughly with the lemons

Step 3: place in a bowl and season with salt thyme and curry

Step 4: leave aside for 15- 20 minutes to absorb seasoning. Heat some oil in a frying pan and fry the fish

Step 5: grind the tomatoes, onion and peppers

Step 6: heat oil in a pot and add the ground ingredients and cook for 20 minutes until fairly reduced.

Step 7: blend in tomato puree and add the fried pieces of fish

Step 8: season and gentle simmer for additional 10 minutes

Step 9: remove from heat and serve with boiled rice yam plantain
